This fall favorite is packed with vitamins and nutrition and is really simple to make.
Combine
2 Tbsp minced fresh parsley
2 Tbsp olive oil
2 minced Garlic cloves
1 tsp salt
1/2 tsp pepper
Add 3 1/2 lbs of butternut squash, peeled and cut in 1 inch cubes – and toss until coated
Bake uncovered at 400 for about 50 minutes or until tender
Stir in 1/3 cup of Parmesan cheese or vegan Parmesan cheese if preferred.
