Easy Healthy Dal


This recipe is easy, fast and healthy and can easily be adapted with the veggies that you have on hand.


1 Tbsp coconut oil

4 cups diced veggies of your choice

1/2 cup water

1/2 cup uncooked lentils

1 400ml can diced tomatoes

1 400 ml coconut milk

1 1/2 Tsp garlic powder

1 1/2 Tsp minced onion powder

1 Tbsp curry powder

1 Tsp salt

pepper to taste


In a large pot melt the coconut oil, add veggies, increase heat to medium and add all the rest of the ingredients. Bring to a boil. Reduce to medium, cook until tender (approx 20-30 minutes)


Serve over rice or quinoa. Top with cilantro if desired.
