One Pot Vegan Lettuce Wraps

This quick and simple recipe takes less thán 30 minutes to make and there is no mess as you only need one pot!

1 cup of quinoa

1 3/4 cup vegetable broth

1 14 oz can of black beans, rinsed

1 red pepper, seeded and diced

3 Tbsp of Tamari

2 Tsp paprika

1/4 Tsp cayenne pepper

1 Tbsp lime juice

salt and pepper to taste

Add all of the ingredients into a pot, mix and bring to a boil. Reduce heat and cover and cook for about 16-20 minutes or until quinoa is fluffy.

Place a large lettuce leaf on plate, add a scoop of the bean and quinoa mixture in the middle of the leaf, top with toppings ( avacado, cilantro, green onions, lime, cashew cheese) wrap up and Enjoy!
