Simple Pasta Sauce

If you are short on time, this fast, easy and healthy sauce can be whipped up in minutes and is definetely company-worthy.

1 cup tomatoes

6 sun dried tomatoes (either soaked or marinated in oil)

1/4 cup olive oil

2 cloves garlic

1 date

2 Tbsp fresh parsley or basil

1 tsp salt

Combine in a processor or blender until smooth.  Serve with zucchini noodles or gluten-free pasta and a salad.
